I am officially back on the wagon.
For about a week and a half now.
That means I joined Weight Watchers again.
I guess 'joined' wouldn't be the right term since I am a Lifetime member.
Rejoined.
Restarted.
It's good.
I feel good.
I feel lighter in spirit.
I feel strenghtened in resolve.
I feel capable.
I feel hopeful for the future as each day I try to see through my present self to the potential I hold.
Here is the recipe for these bran muffins, from Denise, via the All Bran box, with a few adjustments of my own. 1 point! Yields 1 dozen.
2 cups All Bran
1 1/4 c skim milk
1 1/4 cup white whole wheat flour
1/2 c splenda
1 T baking powder
1/4 t salt
1 egg
1/4 c unsweetened applesauce
craisins (optional- I leave mine out to increase the chances of my kids deigning to eat them.)
Pour bran and milk into a large bowl and soften bran in milk for about 5 minutes. Stir in applesauce and egg.
Mix dry ingredients in another bowl and add to the bran mixture, stirring just until combined. Add the Craisins if desired. Pour into greased muffin tins and bake at 400 degrees for about 12 minutes. (Your time may be longer as my oven is a bit hot.) I double this and put a dozen in the freezer for later. Yum!

I need to heft myself onto the wagon as well, but I really don't want to eat those muffins!
I sooo love bran muffins! I will have to get stuff to make these next pay period.

I love those muffins. But I love so many other things as well. It's hard being on the wagon. Good for you!

That wagon does not sound like a wagon I wanna be on! (As I down a bag of doritos and do my homework) ;) However, that smoothie looked so good and I wanna have like 50 of those right now!! :) I love and miss you!
Your muffin revisions look really good! I know what you mean about trying to keep your kids from eating them all; John LOVES these bran muffins and I'm lucky if I get enough for one breakfast.
I love being on the WW Wagon. I need to hold on a little tighter, as I haven't quite "fallen off," but not being as diligent as I should be.
